Abstract
The COVID-19 pandemic has changed many activities, including teaching, and learning activities. This study aims to set up the protocols for an online, open book, essay-based exam at Ho Chi Minh City University of Food Industry. By the online survey using Google Form, the result showed that more than 90% of learners have either a smartphone and/or a laptop, meeting the basic conditions for the online exam process in general as well as the online essay-based exam in particular. The online essay-based exam protocols has been piloted with 23 courses, 352 virtual examination rooms, 7278 entries. The average test submission success rate is 97.28% in the condition that learners have limited access to high-speed connections. Besides, learners also evaluate the implementation process clearly and conveniently. The online essay exam process is generally applicable to the entire University of Food Industry in Ho Chi Minh City as well as to units in need.
