ANTIOXIDANT ACTIVITY OF PHYCOBILIPROTEIN HYDROLYSATES FROM Chaetomorpha aerea USING PROTAMEX ENZYME

Abstract
Allophycocyanin (APC), C-phycocyanin (C-PC), and R-phycoerythrin (R-PE) are phycobiliproteins that have garnered attention for their wide range of biotechnological applications in food technology, cosmetics, analytical processes and are extensively used as fluorescent probes. They are the pigment present mainly in red algae and green algae. In this study, we focus on factors affecting the hydrolysis of APC, C-PC and R-PE from Chaetomorpha aerea using protamex enzyme to obtain bioactive peptides. Influential factors were investigated, such as enzyme concentration, temperature and hydrolysis time. At an enzyme/substrate ratio of 1.25% v/w, at 50 ℃ for 90 minutes, the DPPH radical scavenging capacity with the degree of hydrolysis for APC, C-PC and R-PE is (71,25%; 44.80%); (72.67%; 48.36%) and (70.56%; 52.63%).
